I'm due to visit Windsor Castle soon and I
wondered who recived their V.Cs form
the Zulu War here and if there are any artefacts from the war to be seen.

Those decorated at Windsor Castle received their medal & decorations from Queen Victoria.
Take a look in St. George's Chapel there is a nice full length memorial to the prince Imperial of France.

Did any of the Rorke's Drift defenders receive their V.C's here or were they all presented with the medals before returning home?

William Allan received his V.C. there from Queen Victoria, on 9th December, 1879.
In the same ceremony John William Roy, of 1st/24th, another Rorke's Drift defender received his D.C.M.
